A kipper is a whole herring that has been split from head to tail, gutted and cold smoked.

Not to be confused with a bloater, which is a herring that has been cold smoked without gutting. Or a buckling, which is a herring which has been gutted and hot smoked. Or a smokie which is not a herring, but a haddock, that has been split and hot smoked.

'Kip' is slang for a bed, and a 'kipper' is a sleeper thereon.
Folk etymology has it that this harks back to common lodging houses, where the communal bed was simply a rope strung across the room under the shoulders of the sleepers, who looked like kippers hung up in the smoke house.
Folk may be right, it is one of their words.
