I've just read in my new Geometry of Pasta book that Ravioli is two sheets of pasta around a filling. Agnolotti is one sheet, circular or rectangular, folded over a filling. The popular tinned Heinz lunch (lovely straight out of the tin), is actually Agnolotti.
