Is there a common word for animals that have a shell or home on their back? For example a tortoise or a snail.

I think you're getting confused when you talk about tortoises and snails in the same group. The carapace of a tortoise or turtle is made from bone, but I think the shell of a snail is built from calcium carbonate taken from the environment rather than being related to the snail's internal structure. I may be wrong of course.
