Siamese Cats

The reason Siamese cats have their disctinctive colouration is that the enzyme tyrosinase is temperature sensitive, i.e. it does not work at body heat. Tyrosinase is responsible for the formation of melanin the brown pigment in skin, hair and brown eyes. Putting a Siamese cat in the fridge to get it to go brown all over would take some time to have an effect. Old blond hair would not become brown, only newly growing hair would go brown. Once the hair was brown it would not go blond if the temperature was raised. but the brown hair would grow out as the blond hair replaced it.
