What is the term given to someone who's job could be the same as their surname i.e: John Baker is a baker.

Yes!

We looked at this once before, and established that all three words are in the OED, and so are "pedanticness" and "pedantism".

The term is aptronym, as in Dr Diskin, chiropractor and Dr I. Tooth... guess what that one does for a living! I once went to a doctor named Dr Stillwell, but he wasn't. I noticed his obituary in the paper a week after I'd seen him!
